

茄汁焗洋葱豬扒飯
茄汁焗洋葱豬扒飯可算是港式西餐代表之一。 差不多每位香港人也曾經吃過至少一次。從前我在香港生活時比較喜歡吃雞和牛, 所以這道菜並不是我的首選。 但自我戒吃牛肉之後, 豬肉便成為其代替品。
我已經很久沒吃茄汁焗洋葱豬扒飯, 亦從未試過在家做。 我沒有參考任何食譜, 只憑著兒時記憶, 第一次嘗試在家番做這個餸。 竟想不到岀來效果相當不錯。 老公和我也覺得賣相和味道跟港式餐廳的非常相近啊!
Baked pork chop with rice and tomato sauce is one of the classic dishes in Hong Kong style Western cuisine. All people from Hong Kong must have eaten it at least once in their life time. It wasn't my favorite dish when I was still living in Hong Kong because I liked beef and chicken more than pork. But ever since I stop eating beef, pork becomes an substitute.
I haven't eaten this dish for a very long time and I've never made it at home. Without following any recipes, just based on my childhood memory, I replicated this dish for the first time. Surprisingly, it turned out great. Both my hubby and I thought the look and the taste were pretty closed the ones we ate in Hong Kong!
Ingredients:
2 cups rice, cooked
1 egg, beaten
4 pork chops, bone in
fresh mozzarella cheese, diced
1 yellow onion, sliced
3 oz tomato paste
1 cup chicken broth
1 tsp corn starch
2 tbsp canola oil
light soy sauce
salt
sugar
ground white pepper
ground black pepper
Preheat the oven to 400 degrees F. Pound the pork chops to tender the meat. Marinade them with corn starch, light soy sauce, salt and ground white pepper for at least 30 minutes.
In a large skillet with medium heat, stir-fry the rice and the egg together. Toss well until the rice is coated with the egg and turn golden yellow. Put the fried rice in a large baking dish and set aside.
In the same skillet with canola oil, pan-fry the pork chop with medium high heat. Do not flip until one side is completely golden brown. When both sides are golden brown and fully cooked, takes about 8 minutes, put the pork chops over the fried rice.
Put the onions in the skillet and cook them until transparent, almost caramelized. Add the tomato paste. While stirring, pour in the chicken broth slowly. Stop until the sauce turns into a right consistency, not too thick and not too thin. Season with salt, sugar, and ground black pepper. Pour the sauce over the pork chops. Place the mozzarella cheese on top. Put the baking dish on a large baking sheet. Broil it in oven for about 10 to 15 minutes until the cheese melt and the sauce is lightly golden. When served, scoop some rice, a pork chop and some sauce onto a plate and garnish with some cooked green veggies.
